Turkey Meatloaf with Pan Seared Tomato Relish Quinoa Salad

TURKEY MEATLOAF WTIH PAN SEARED TOMATO RELISH QUINOA SALAD & SWISS CHARD

Ingredients

Zero fat spray
4oz ground turkey
1 tsp soy substitute
1 tbsp minced fresh garlic
1 tbsp minced yellow onion
1 tsp diced red/green bell pepper
1 tbsp diced parsley garnish
½ tsp black pepper
½ tsp cumin
1 egg white
1 dash hot sauce
1 tsp Dijon mustard
½ tsp canola or olive oil

TURKEY MEATLOAF PREPARATION
Place oil in pan, add garlic, onion, bell pepper, pepper, parsley, hot sauce, cumin and Dijon.  Toss till lightly brown. Add in turkey and mix well and cook till no longer pink. Remove from heat and add egg white. Form into a small casserole dish after spraying with zero fat spray and place in 400 degree oven for 10-12 minutes. Take bread knife and separate turkey loaf from casserole pan. Let rest and tip upside down on Swiss chard.

SEARED SWISS CHARD

Ingredients

2 large leaves of Swiss chard (collard greens if needed)
1 tbsp garlic minced
2 tbsp julienne red onion
½ tsp black pepper
1 tbsp julienne red bell pepper
½ tsp canola or olive oil
1 oz dry white wine or water

SEARED SWISS CHARD PREPARATION
Place oil in pan: add garlic, onion, bell pepper and black pepper. Sear till lightly brown. Place greens in pan and toss to other side. Deglaze pan with wine or water and remove to become the base of the plate presentation. 

PAN SEARED TOMATO RELISH W QUINOA SALAD

Ingredients 

½ cup diced fresh tomatoes
1 tsp fresh minced garlic
½ tsp black pepper
1 tbsp diced green onion
1 tbsp fresh minced yellow onion
½ tsp diced jalapenos
1 squeeze fresh lemon
2 oz diced fresh apple 
½ cup quinoa
2 oz salt free vegetable stock 
½ tsp canola or olive oil

PAN SEARED TOMATO RELISH W QUINOA SALAD PREPARATION
Squeeze lemon over apples and keep in small bowl. Place oil in pan on medium heat and add garlic, yellow onion, and pepper. Toss till lightly brown. Add quinoa and stock and simmer till fluid is gone. Hold in separate bowl. Add tomatoes, green onion, apples, jalapenos and lightly toss till evenly mixed: Hold to serve.
