GARLIC PORK STIR FRY, BROWN RICE CASSEROLE AND TRI-COLOR PEPPERS TOPPED WITH SEARED STRAWBERRIES AND APPLES FOR FAMILIES
Ingredients
2 tbspn oil
20 oz Pork Chop lean with trim off
2 tbspn diced green onion
4 tbspn julienne red bell pepper
4 tbspn yellow bell pepper
4 tbspn green bell pepper
4 tbspn minced garlic
1 tspn crushed red pepper
8 tbspn julienne onion
8 tbspn julienne carrots
1 tbspn low salt soy
2 tbspn red chile peppers
2 tbspn peanuts
4 tbspn white wine dry
¼ cup white wine vinegar
2 tspn black pepper
2 tspn all spice
4 tbspn diced cilantro
2 cup brown rice for casserole
1 tbspn cilantro for garnish
Portion for family of four
COOKING INSTRUCTIONS FOR STIR FRY
Place oil in pan and add pork. Add garlic, onion, carrots and all vegetables. Add spices. Deglaze with wine and add soy. Cook rice separately in pot. Place all together in large baking pan. Brown in oven when ready to serve to family. Garnish with green onion, peanuts and apple strawberry topping.
STRAWBERRY AND APPLE TOPPING
Ingredients
1 cup strawberries cut in half
1 cup sliced green apples
1 tspn cinnamon
1/8 tspn nutmeg
1 tspn coriander
1 tbspn diced onion
½ tspn canola oil
COOKING INSTRUCTIONS FOR STRAWBERRY AND APPLE TOPPING
Mix cinnamon, nutmeg and coriander in small bowl. Place apples, onion and strawberries in saute pan with oil. Brown quickly and dust with seasoning remove and place on top of casserole for garnish.
