Blackened Turkey Breast with Cilantro Cream and Swill Chard Salad

BLACKENED TURKEY BREAST WITH CILANTRO CREAM AND SWISS CHARD SALAD

Ingredients

5-6 oz fresh turkey breast

1 tbspn chopped cilantro

½ tspn minced chopped garlic

3 oz fat free sour cream

2 oz skim milk

1 tbspn diced fine red onion

½ tspn powdered garlic

½ tspn powdered onion

½ tspn black pepper

Blackened Seasoning:

1 tbspn black pepper

1 tbspn garlic powder

1 tbspn onion powder

2 tbspn paprika

¼ tbspn cayenne pepper

½ tbspn white pepper

1 tbspn ground thyme

½ tbspn ground sage

BLACKENED SEASONING PREPARATION

Place all ingredients in a mixing bowl and stir.

COOKING PREPARATION FOR TURKEY BREAST

Season turkey breast with blackened seasoning.  Sear on each side for 4 minutes and hold in pan.  Place all other ingredients in mixing bowl:  cilantro, garlic minced, sour cream, skim milk, diced onion, powdered garlic and onion, pepper and blend well.  Serve as a side dipping sauce.

CILANTRO CREAM PREPARATION

Place all ingredients in a mixing bowl and stir.

COOKING PREPARATION FOR TURKEY BREAST SWISS CHARD SALAD

Ingredients

1 cup swiss chard leaves

1 tbspn minced garlic

½ tspn onion powder

½ tspn garlic powder

½ tspn Italian seasoning

½ tspn coriander

½ tspn black pepper

2 tbspn julienne onion

4 tbspn sliced mushrooms

4 tbspn sliced turnips

1 tbspn white wine

COOKING INSTRUCTIONS FOR SWISS CHARD SALAD

Place oil in pan and sear garlic, onion, mushrooms, turnips with pepper, and seasoning.  Place to the side and place swiss chard in pan.  Sear for 3 minutes and place all ingredients on top.
