BLACKENED SNAPPER, HONEY MUSTARD & SEARED CAULIFLOWER & BROCCOLI FLOWERS
Ingredients
SALT FREE BLACKENED SEASONING:
Recipe makes a large tub for future use:
4 oz black pepper
2 cups garlic powder
2 cups onion powder
6 cups paprika
2 oz cayenne pepper
4 oz white pepper
4 oz ground thyme
][2 oz ground sage
1 oz blackened seasoning salt free
5 oz Catfish Filet
½ tspn canola oil
BLACKENED SNAPPER PREPARATION
Mix all ingredients for blackened seasoning and hold for use. Dust Snapper on both sides with blackened seasoning. Place oil in pan on medium high heat. Sear, don’t move, catfish for 3 minutes to seal in juices and sear properly. Turn and finish, remove from heat.
HONEY MUSTARD SAUCE
Ingredients
1 cup fat free Greek yogurt plain
½ cup Dijon mustard
1 tspn blackened seasoning
2 tbspn honey
2 tbspn fat free sour cream
HONEY MUSTARD PREPARATION
Blend all ingredients till uniform and smooth.
SEARED CAULIFLOWER & BROCCOLI FLOWERS
Ingredients
Zero fat spray
3 large slices of cauliflower
3 broccoli florets
1 tspn black pepper
1 tspn chopped basil
½ tspn white pepper
3 tbspn non-fat yogurt
1 tspn oregano
1 tbspn diced red bell pepper
½ tspn canola oil
SEARED CAULIFLOWER & BROCCOLI FLOWER PREPARATION
Dust cauliflower and broccoli with blackened seasoning. Spray sauté pan with zero fat spray and sear cauliflower on both sides. Add broccoli and place water in pan and cover to steam. Mix all other ingredients to make flower sauce. Remove from pan and place on plate with cauliflower first, broccoli and top with dollop of flower sauce.
