BLACK BEAN DIJON BURGER & SWEET POTATO CRISPS & GRILLED TOMATOES
Ingredients
4 oz black beans drained
1 oz minced garlic
1 oz minced yellow onion
¼ tspn chili powder
1 egg white
1 tspn Italian bread crumbs
½ tspn dry oregano
2 oz wet oatmeal
½ tspn black pepper
BLACK BEAN PREPARATION
In large mixing bowl combine all ingredients. Form into patty. Sear in pan on medium high heat till browned.
SWEET POTATO CRISPS
Ingredients
3 slices sweet potatoes 3/8" thick
Zero fat spray
1 tspn onion powder
1 tspn garlic powder
¼ tspn white pepper
½ tspn black pepper
1 tspn ground mustard
SWEET POTATO CRISP PREPARATION
Mix all seasoning in small bowl. Spray each slice of sweet potato with zero fat spray. Dust with seasoning and place in pan on medium high till brown on both sides or sauté till lightly brown.
GRILLED TOMATOES PROVENCAL
Ingredients
½ medium ripe tomato sliced in 4
1 tbspn minced garlic
1 tbspn dry breadcrumbs
1 tspn diced parsley
1 tspn Italian seasoning
½ tspn parmesan cheese grated
2 egg whites
GRILLED TOMATO PREPARATION
Heat skillet and place zero fat spray and lightly brown garlic. Reduce heat and add breadcrumbs, parsley, Italian seasoning and parmesan. Dredge tomatoes in egg whites and then place garlic mixture on top of slices. Sear in skillet for 3 minutes. Remove
DIJON SAUCE
Ingredients
1 tbspn Dijon Mustard
2 tbspn non-fat yogurt
½ tspn onion powder
½ tspn garlic powder
½ tspn black pepper
DIJON PREPARATION
Mix all ingredients in a small mixing bowl and serve
