Smoked Seared Tuna

Chef Rob Stinson teaches you a quick and easy way to smoke-sear fresh tuna with a wasabi aioli and braised bitter greens. 

 

 

Ingredients:
 
½ tspn sesame oil
 
5 oz tuna steak
 
1 tbspn cracked black pepper
 
¼ pound of mesquite chips or hickory
 
 
Preperation:
 
Place tuna on rack in hotel pan.  Place mesquite on opposite end of pan and cover with foil.  Place over high heat where mesquite is for 6 minutes.  Carefully remove from heat and remove foil under exhaust hood or outside as smoke will be thick.  After smoking the tuna can be seared in a skillet on high heat for 1 minute a side to taste using the sesame oil. (Rare, Medium Rare, Medium or Well done)

Ingredients:
 
½ tbspn sesame oil
 
½ tbspn organic local honey
 
1 tspn garlic minced
 
½ tbspn soy sauce
 
2 tbspn orange juice squeezed from fresh orange
 
2 tbspn lemon juice squeezed from fresh lemon
 
½ tbspn orange peel
 
½ tbspn lemon peel
 
½ tbspn sesame seeds
 
¼ tspn crushed red pepper
 
1 tbspn ketchup
 
Preperation:
 
Place oil in saucepan with garlic and lightly brown.  Add all other ingredients and raise to a light boil.  Remove and cool to serve

Ingredients:
 
1 tbspn wasabi powder
 
½ cup plain yogurt
 
½ tspn garlic powder
 
½ tspn sucralose
 
 
Preperation:
 
Mix all ingredients in a small bowl with a whisk.  Chill and serve.

Ingredients
 
4 large leaves of turnip greens
 
2 tbspn sliced turnip root 
 
1/2 tspn canola oil
 
1/2 tspn chopped lean bacon cooked crisp & dried & chopped
 
2 tbspn chopped white onion
 
1 tbspn minced  garlic
 
2 tbspn diced red bell pepper 
 
Preperation:
 
Place oil in sauté pan on high heat.  Place garlic, onion and turnip root in pan and sear till lightly brown.  Add bacon to pan and then layer turnip greens on top to cover the entire pan.  Turn with spatula and braise the other side of greens and serve.
