Marinated Goat Chops

Marinated Goat Chops

Ingredients:

5 oz lean trim goat chops
1 tbspn cracked black pepper

Marinade:

1 tbspn fresh coriander
½ cup orange juice
1/2 tbspn canola oil
1 clove garlic minced

Preparation:

Mix all ingredients for marinade in large mixing bowl.  Place goat chops in marinade.  Let chops marinate overnight.  Very little of the marinade will impart the oil into the chops.  Remove chops from marinade and sprinkle pepper on each chop and sear over high heat in saute pan.  Let stand till ready to serve

Carmelized Onion Glaze

Ingredients:

3 tbspn julienne yellow onion
1/2 tbspn minced garlic
½  tspn canola oil
pinch black pepper
pinch cayenne pepper

Preparation:

Place oil in hot pan and add onions.  Saute until translucent add garlic, salt, black and cayenne pepper.  Cook until light brown and hold until ready to serve.

Spinach Salad

Ingredients:

1 cup cleaned spinach leaves preferably organic
½ tspn olive oil
2 tbspn domestic mushroom
2 tbspn red onion julienne
1 tspn capers in brine
1/2 tbspn minced garlic
1/2 lemon squeeze
1/4 tspn finely diced serano peppers
1 tspn crumbled goat cheese

Preparation:

Place oil in hot pan and add onion, serano peppers, garlic, capers and mushrooms and saute till tender.  Add lemon to sauce and hold in pan till ready to serve.  Place spinach on plate and top with sauce and garnish with goat cheese.
