Mississippi-Grown Omelette

Chef Rob Stinson creates a Mississippi-grown omelette using fresh vegetables from Mississippi’s farmers markets and baked potato pancakes.
Mississippi-Grown Omelette
Ingredients:
Spray cooking oil on Teflon pan
1 whole egg
3 egg whites
1 tbspn minced garlic
1 tbspn purple pepper
1/2 tspn minced serano pepper
1 tbspn red bell pepper
1 tbspn diced green onion
1 tbspn goat cheese broken into small pieces
Preparation:
Separate three eggs into whites and yolks. Store yolks and mix whites with last remaining egg. Place garlic, purple, serano and red bell pepper in pan. Cook till tender and add egg mixture. Leave on one side till white all around and firm. Turn over and cook till firm. Remove from pan and top with green onions as garnish.

Baked Potato Pancakes
Ingredients:
4 oz shredded potato
1 egg white
1 tbsp skim milk
pinch of cayenne pepper
pinch of black pepper
Preparation:
Bake potato for 30 minutes. When cool shred potato and place in mixing bowl with egg white and milk. Add cayenne, salt and pepper and mix till smooth and even. Form a potato patty and place on foil in the oven at 350 degrees for 30 minutes till brown and crispy.

Smoked Turkey Strips
Ingredients:
3 oz smoked turkey cut 1" x 1/3" x 6"
½ tspn canola oil to sear
Preparation:
Place turkey strips on rack in hotel pan. Place mesquite on opposite end of pan and cover with foil. Place over high heat where mesquite is for 6 minutes. Carefully remove from heat and remove foil under exhaust hood or outside as smoke will be thick. Place turkey strips on pan with potatoes till ready to serve.
